Pimento Cheese

With the heat
I do not feel like cooking or eating.

Memories of my father making pimento cheese
 I have  the ingredients and made a small portion,
Especially since not made in a long time.
Colby cheese, pimento, Hellmans Mayo and a dash of hot sauce
went into my super small blender.
I think in the past made this with cheddar cheese but to strong for my taste at this time.
Pleased with the taste, so with some wheat crackers,
carrot and celery sticks along with some tomato soup
with my fresh Basil
lunch is on
May eat the same thing this evening
Callie usually stays outside a lot or on screen porch
but she wants to be inside.
We both like the sound of the big fan whirling...

My mom made pimento and cheese when I was growing up. The kind you buy at the store doesn't taste nearly as good as that did.

ernestine, you know how to make me hungry better than anyone else i know! i LOVE homemade pimento cheese and have not made it in 10 years! i make it similar to yours - but i use sharp and medium cheddar most often and add ground black pepper and a sprinkle of paprika to the top when i finish. when i was young we ate it in sandwiches, spread over crackers, and stuffed in celery ribs. Yummmmmmmm!

Sky, I add the black pepper also and right now am stuffing a few celery ribs. Next time I may make it half in half with some cheddar cheese. When I write all my children respond and gives them some ideas of something different to make. s/m - I do not like things prepared from grocery. Only buy in an emergency - like homemade and this is so simple to make....

Yes Tabor there is A/C:) Just do not like it running all the time
as it feels cold.
Do not like staying inside a lot with it so hot outside:)

Tabor, I like the sound of this big old fan that was my mother's
Air on but run ceiling fans also.
It is 107 outside right now and when I go outside it bothers me and when I stay inside most of the day - just do not like it. Happiest when I am outside :)

This heat does sap our energy. Be careful and don't stay outside too long at a time.

Our cottage is five separate buildings, each self contained, added for function. All of them have heat and air. During these summer days I prefer fans over a/c. I love the daily afternoon breeze, open windows and know exactly what you mean when you say a/c is too cold. It’s bad when you have to keep a wrap in the car just to go grocery shopping.
