Baking

Yesterday could not seem to get going, sun was shining
but in the 40's and windy.
Sun shining so brightly, pulled the old rocker as close to the door as I could and sat in the sun,
then willed myself to put on jacket and babushka, like my mother used to wear in Michigan and later in Tennessee and swore
I would never do this :)  Went outside with afghan taken off end of my bed, now this is my prize
but I did not care just took it out and wrapped myself in it.    Felt so good, almost fell asleep.
Soon needed to prepare afternoon meal and willed myself to go in with the thought there will
be enough for several days.  A meal filled with memories, I always prepared but in the past the next door neighbor had recently lost
his wife, daughter could come every few months from Oklahoma, Carol would always invite me to come for dinner and it was so appreciated and started with a glass of white wine.  She made the patties this way, called them croquet's  and I have copied her :)
Began to prepare Salmon croquet's formed in the size of golf ball I put them
in a plastic bag filled with Panko bread crumbs to coat. I use a small can of Red Salmon for just me, when son arrives will use a large can.  Then made the so simple to make Peach Pie, when made had not restocked brown
sugar for topping so sprinkled a handful of Pecan pieces on top.

Weary night and turned my bed down at 6:00 and fell asleep at 8:00.

Now this morning going as usual and now Blueberry, Cranberry bread coming out of oven
and ready for glaze.    Nothing in freezer that I have baked and am starting to restock.
Need to put lemon glaze on bread
and time for day to begin at a slower pace....

Some days I am just so weary that I have to drag myself around to do anything!

I wonder why you swore to never wrap up in a "babushka" as your mother did? I love the idea of going out on the deck, wrapped in a cozy afghan or blanket. The crisp air is wonderful to breath in deeply!

Have you shared that blueberry cranberry recipe here on your blog? Every time you mention it, I get hungry!

I hope you have a beautiful week!

Oh, that sunshine was so beautifully described and pictured that I felt it here myself. And your baking photos leave me VERY hungry ♥

(Putting this here in case you don't see it on my blog) Ernestine, Thank you! I did send you my address at your blog email. Did you see? I can send again, if not. I can't wait to try the bread! Especially in the summer when blueberries and Michigan cranberries are available! :) It sounds wonderful.

Could I come over? :) We could eat and work on crocheting. In reply to your comment on my blog, maybe you could ask the girl who brings eggs to you; maybe she knows how to crochet. I'm sure anyone you know who crochets would be thrilled to share her knowledge with you. There are probably good instructional videos on YouTube; however, I always need one on one guidance to learn something. Wish I could help, but too many miles between us. Hope you have a wonderful day! xoxo

Charlotte, I need one on one instructions also.
Anna Lee, I miss you. So patient you were with me, always smiling and now
seems 15 years later I forgot what you taught me.
Charlotte, you are an angel....

Yum! I had forgotten the salmon croquettes from long ago. I loved them but sodium content of canned salmon was high so I stopped. I did not use the panko - I made them like my mom did with flour instead. To the salmon where the skin was removed I added a beaten egg or 2 depending on size, some finely chopped onions, black pepper, and sometimes a finely chopped potato or a small can of corn. If I didn't have these I just used the onion and salmon which is all my mom used. Hubby liked them with finely diced jalapenos, too. To that I added about 4-5 heaping tablespoons of flour which made the crust as they cooked. (I always used the large can of salmon.) I used a large spoon to scoop out the croquettes to cook, and formed mine into oblong croquettes, not patties, about the width of 3 fingers and the length of my longest finger. Instead of frying, I sprayed them each on all sides with Pam and put them in the oven at 350, and they browned with a beautiful crust just like they had been fried. No mess and no grease! This makes me miss them!
We could have sat outside together in the sunshine before we got our late snowfall which dumped about 4-5 inches on us. I was wrapped in a blanket on top of my warm, long shawl. The weather was chilly but with gorgeous sunshine, and I enjoyed every moment in the rays.

Interesting as I never heard of forming this way and with flour.
Sky, take care and good to hear from you...
