Granddaugher Shared

When Jessica emailed me this morning
she mentioned making a Kale salad with Radicchio,
shared her ingredients and dressing.

Had most of the ingredients on hand and was leaving
for errands in town.    Purchased the Kale, which I know is super healthy
but just not a favorite of mine and Radicchio which I seldom use.



Cut up lacy kale real small, sliced red onion, scallion, radicchio and sauteed in small amount of balsamic vinegar
and olive oil.  (some eat the kale raw but I needed to cook just a minute for this one).
Dressing, whisk small amount of fresh lemon juice, mustard, drop of maple syrup
and olive oil.
Sprinkled sliced almonds and sunflower seeds on top.
Was out of dried cranberries but will add next time.

This slightly different from my granddaughter's
since I do not like raw kale :)
but was so good, healthy
and easy for this one.
Sliced a hard boiled egg on the side
and next time may sprinkle some cooked
bacon on top.

I will make this often.

Ah, now, that sounds good. It must be fun to be on the receiving end of recipes from one's grandkids. :)

It sounds good to me, too. I don't each much kale but think that chopping it really small might make it more palatable for me. (Embarrassed to admit I don't even know what radicchio is!) The dressing sounds tasty....

Like you, I prefer my kale cooked. But the dressing and other items sound delicious.

I too am with you on the raw kale. I find it's not bad in a soup with a lot of other veggies and flavors.

Val, oh yes - this is new to me receiving from special grandchildren.
Lorraine, Rebecca and Tabor, it
was so good and I am really not
that easy to please.
A new, simple and healthy item
for my diet. I am going to add
the radicchio to my cole slaw and maybe salads in the future.

I don't know what Kale is. When I read the word, I pictured a KohlRabi and knew, that wasn't right. Also a bit dim witted on Radicchio also.

You just HAVE to make kale chips Ernestine, they are so easy (just dry torn up bits in the oven for about 10 minutes.). Also put in frying pan with a bit of oil, almonds or pinenuts and some garlic. Yum....

Judy, it is suppose to be a super food..so good for you and I am in to anything that is healthy

I hate to go to the grocery.....very much. Today I thought I should just order from Amazon... I won't, but, would love to.... I like kale cooked.
