For years
Pimento Cheese
was made.
The small cafe
made some a little different.
I inquired and it had chopped pecans, parsley and chives in it.
Just made a small portion
to check out the taste
as these items were on hand .
In the small blender
only pulse cheddar cheese slightly
so it is slightly chunky
add
1/2 small jar of pimento
2 tablespoons of Hellman's Mayo
chopped chives and parsley (from my garden)
add a few chopped pecans
(if I was using more of the ingredients would use the whole jar of pimento)
Good but not quite what I sampled on Wednesday's trip to the big city.
I do know that with this dry mouth that is a part of Sjogrens
there is not much I truly taste
In the past a tiny bit of hot sauce
or horse radish was added.
Might try this and will be tasty as an open faced sandwich
(lately only use one slice of bread)
or on crackers
I smile
because the image looks like a saucer of scrambled eggs.
Might be because of medication I am using
preparing for eye surgery on Monday.

It looks wonderful , and I am going to try it - perhaps with walnuts? Thank you, my friend.
I think I might try cream cheese rather than mayo. Just a thought, I was thinking of my seasonal cheese ball which always turns out firm.
I tried the cornbread today, Ernestine and how splendid it is. I did a post crediting you:

This sounds delicious, will have to try it. Good luck for the eye surgery, I'm sure you will be looking forward to it being over, AND being successful! Take care, Mrs A
I haven't had pimento cheese in years and years. I don't think it's your eyes, because it kind of looks like scrambled eggs to me too, LOL. Your surgery will be fine--just like last time.
Like Judy... pimento cheese is not common today. I love that you try to recreate food that you purchased and liked.
WWW, thank you - and I did use 1/2 cream cheese and 1/2 mayo :)
Tabor, I do this often and ask questions about the ingredients used.
Cate, Mrs A and Judy, thank you
I think your concoctions look delicious!
Wishing you love and healing before, during, and after your eye surgery.
My mom made homemade pimento and cheese and I loved it. I can't buy anything that tastes quite like it.
mine looks a bit more firmly whipped when finished, but i drain my pimento peppers and do not add the oil from the jar - do you add the oil? i loveeee homemade pimento cheese and add a small diced jalapeno pepper with a few of its seeds to give it a kick. i use the old fashioned grater to grate my cheese which also affects the finished product's texture. this post makes me want to make some, but at the moment i don't need the sodium cheese brings. :( i have the autoimmune issues with the dry mouth/eyes, but thankfully so far it has not affected my ability to taste - or maybe i should say regretfully? perhaps i would lose weight if eating were not as appealing as it is! (when i mentioned pimento cheese to several people here they had no idea what i was talking about - it is a southern dish.)
Sky, always drain my pimento and used my small processor. At the cafe it was chunky and I usually make mine smooth. it taste so good and may use walnuts next time.
Oh, I wish I could gain a couple of pounds :) So right guess it is Southern.
Kaveri, Thank you...I you were near you would be my doctor :)
Sallysmom, do not like what you buy only homemade :)
Hi Ernestine,
I have been deleting spam in my spam folder and have found several comments from you there. They didn't even come to me as comments, but went directly to spam folder. I guess I will have to go to the spam list to see if you leave a comment. I really don't understand why this happens occasionally. Bear with me...
