3/4 Cup oil
3/4 cup sugar (I use 1 cup because I like it sweeter)
2 eggs
1 teaspoon vanilla
1 & 1/2 cups flour
1 tsp baking soda
1 & 1/2 tsp cinnamon
1/2 tsp salt
1 & 1/2 cups shredded carrots
1 & 1/2 Cups chopped walnuts
1 recipe of lemon glaze
Grease and flour a 9 x 5 x 3 loaf pan. In a large bowl, combine oil, sugar, eggs and vanilla, beat well by hand
Stir together flour, baking soda, cinnamon and salt and add this mixture to the egg mixture and stir until combined.
Stir in carrots and walnuts, mix until combined. Pour batter into prepared pan.
Bake at 350 degrees about 1 hour or until toothpick comes out clean. Cool for 10 minutes on wire rack. Remove from pan and cool completely on a wire rack.
Drizzle Lemon Glaze over cooled bread. Sprinkle with shredded lemon peel, if you like.
Lemon Glaze - In a small bowl combine 1/2 cup powdered sugar, 1 teaspoon finely shredded lemon peel and 1 tablespoon lemon juice. Stir until smooth.

Ernestine, This looks wonderful. I will have to try it as soon as I get the ingredients from the store. I love carrot cake so I know I will love this. Yes, we do seem to be a lot alike. Maybe, I was a twin since I have twins!!!

Delicious! I don't often eat cakes but when I do it's Carrot, so as Judy says, this one will be a tasty treat!
The new restaurant is behind Bobby's Dairy Dip! It is really cute; has indoor seating and now that fall is here an outdoor courtyard. It's pricey, though.

Judy and Gail, thanks for the comments. 1/2 of bread has been eaten. Sure do not know why I do not gain weight. I love this cooler weather. Fall is on the way.
Could you spare a slice of that yummy carrot bread??? Looks like cake. I love cake...oh, I am sorry, My stomach was talking there for a minute.
