My Pumpkin Bread


Pumpkin bread in the oven. Will be done in time to enjoy with my breakfast. When I started writing I did not have a file for recipes so do not know if I have posted this family favorite before. This recipe enjoyed for almost 50 years.

The main difference is over the last 5 years I add cranberries. I have been watching and they were finally in the store last Friday.

Every time I bake I miss sharing my baking with my son.

Pumpkin Bread

3 1/2 cups sifted flour
3 cups sugar
2 tsp baking soda
1 tsp salt
3 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/4 tsp ginger
4 eggs
1/2 cup water
1 cup Wesson oil
2 cups canned pumpkin ------- times in the past I had fresh pumpkin
1 cup raisins
1 cup chopped walnuts
1 cup cranberries (optional)
Mix eggs, sugar, pumpkin - then alternate flour, seasonings, oil and water - add nuts, raisins, cranberries.

I use 3 small loaf pans or 2 larger ones. Well greased and I put parchment paper in bottom of pans. 350 degrees for l hour.
IMAGE - 1 hour later - bread is done and cooling :)

  1. Your bread looks wonderful. I can almost smell it cooling. I love pumpkin bread,too. I also love your new header. The weather has been just great here and warm for this time of the year. We need rain really bad though. Have a good week.

    Pumpkin bread looks absolutely delicious. Would love to make some although don't know what Wesson oil is. Do you think sunflower oil would do instead ?

  8. Judy, yes we need rain. Barbara, Wesson Oil is a brand name of a vegetable oil. Any vegetable oil probably would work. Balisha, Jessi and Darlene - thanks for visiting and commenting.

  9. Tabor, I do not cook the cranberries. Sometimes I have chopped them when they were chilled to make smaller pieces. This bread I just put a cup of the whole berries. Noticed they are a little tart. Could have put some sugar on them. But them being tart with the sweetness of everything else does not bother me.
    One year I had some berries in the freezer left from Thanksgiving and that is when I started "sometimes" adding them. Thanks for visiting.
